  • 100 grams asparagus, trimmed
  • Zest of 0.5 lemon, plus extra for garnish
  • Juice of 0.5 lemon
  • 45 mL soy sauce
  • Steamed rice (to serve)

Instructions

  1. Season the chicken: Start by sprinkling the sliced chicken breasts with kosher salt and freshly ground black pepper.
  2. Heat the oil: In a large frying pan or wok, heat the olive oil over medium-high heat.
  3. Cook the chicken: Once the oil is hot, add the seasoned chicken into the pan and stir-fry for about 4 minutes.
  4. Add garlic: Incorporate minced garlic into the pan with the chicken and stir-fry for another 4 minutes.
  5. Cook the asparagus: Add trimmed asparagus, lemon zest, and juice, tossing everything together to combine.
  6. Combine with soy sauce: Pour in the soy sauce and stir well to coat all ingredients.
  7. Serve: Serve the stir-fry over a bed of steamed rice and garnish with extra lemon zest.
