Instructions
- Preheat your oven to 350°F (175°C).
- Line a mini muffin pan with mini paper liners.
- Combine the lemon cake mix, melted butter, and egg in a mixing bowl.
- Spoon the lemon cake mixture into each muffin cup, filling them halfway.
- Beat the softened cream cheese with the powdered sugar, vanilla extract, lemon juice, and lemon zest until creamy.
- Spoon the cream cheese mixture over the lemon cake layer in the muffin liners.
- Bake for 15-18 minutes until set and slightly golden on top.
- Let the bites cool in the pan for a few minutes before transferring to a wire rack.
