Description

Delightful mini treats combining creamy cheesecake and zesty lemon, perfect for parties or as a refreshing dessert.


Ingredients

  • 1 cup lemon cake mix
  • 1/4 cup unsalted butter, melted
  • 1 egg
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a mini muffin pan with mini paper liners.
  3. Combine the lemon cake mix, melted butter, and egg in a mixing bowl.
  4. Spoon the lemon cake mixture into each muffin cup, filling them halfway.
  5. Beat the softened cream cheese with the powdered sugar, vanilla extract, lemon juice, and lemon zest until creamy.
  6. Spoon the cream cheese mixture over the lemon cake layer in the muffin liners.
  7. Bake for 15-18 minutes until set and slightly golden on top.
  8. Let the bites cool in the pan for a few minutes before transferring to a wire rack.

Notes
