Ingredients
1 lb cooked shredded chicken breast
2 tbsp butter
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
2 celery stalks, chopped
1 cup chopped carrots (or diced zucchini for fewer carbs)
1 cup cauliflower florets, chopped small
4 cups chicken broth
1 cup heavy cream
3 oz cream cheese, softened
1 tsp poultry seasoning
1/2 tsp thyme
Salt and black pepper, to taste
Optional toppings: chopped parsley, grated Parmesan, crumbled bacon
Instructions
1. In a large pot, melt butter and olive oil over medium heat.
2. Add onion, garlic, celery, and carrots (or zucchini) and sauté until softened.
3. Stir in cauliflower and cook for another 3–4 minutes.
4. Add chicken broth, poultry seasoning, thyme, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 10–12 minutes until vegetables are tender.
6. Add shredded chicken and cream cheese; stir until melted and combined.
7. Pour in heavy cream and simmer for another 5 minutes until thick and creamy.
8. Adjust seasoning as needed and serve hot.
9. Garnish with parsley, Parmesan, or bacon if desired.
Notes
Use rotisserie chicken for convenience.
Swap cauliflower for chopped mushrooms or broccoli for variety.
For a thicker soup, add a bit more cream cheese or reduce the broth slightly.
