A delightful pasta salad capturing the vibrant flavors of street corn with sweet corn, juicy tomatoes, and a zesty creamy dressing.
Ingredients

- 8 oz pasta (fusilli or rotini)
- 1 cup corn kernels (fresh or canned)
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta in a pot of salted boiling water until al dente, about 8 to 10 minutes. Drain and cool under cold water.
- Prepare the vegetables: boil or grill fresh corn, dice the red onion, halve the cherry tomatoes, and chop the cilantro.
- Mix the cooled pasta, corn, cherry tomatoes, red onion, and cilantro in a large bowl.
- Make the dressing by whisking mayonnaise, lime juice, chili powder, salt, and pepper in a separate bowl.
- Combine the dressing with the salad mixture, tossing gently to coat.
- Chill in the refrigerator for at least 30 minutes to meld flavors.
- Serve as a side or main dish, garnishing with extra cilantro or a sprinkle of chili powder if desired.
Notes
Ideal for gatherings and picnics. For a lighter version, substitute half of the mayonnaise with Greek yogurt.
