  • 0.5 cups butter (softened)
  • 2 large eggs (room temperature)
  • 0.5 cups milk (dairy-free options include almond or oat milk)
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar (for the topping)
  • 1 cup coconut cream
  • 12 cups shredded coconut (sweetened and tinted pink)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the sifted flour and cocoa powder in a large bowl.
  3. Cream the softened butter and sugar in another bowl until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  5. Combine the dry ingredients with the butter mixture, alternating with milk. Mix until just combined.
  6. Transfer the batter to a greased baking pan and smooth the top.
  7. Bake for 25-30 minutes, checking doneness with a toothpick.
  8. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.
