Ingredients
4 large flour tortillas or whole-wheat wraps
1 cup hummus (store-bought or homemade)
1/2 cup shredded carrots
1/2 cup sliced cucumber or bell peppers
1/2 cup baby spinach or lettuce leaves
1/4 cup thinly sliced red cabbage
2 tbsp chopped fresh herbs (parsley or cilantro)
Salt and pepper, to taste
Optional: feta cheese crumbles or avocado slices
Instructions
1. Lay a tortilla flat on a clean surface.
2. Spread a generous layer of hummus evenly across the tortilla.
3. Arrange the veggies evenly over the hummus.
4. Sprinkle with herbs, salt, and pepper.
5. Roll the tortilla tightly from one end to the other.
6. Slice into 1-inch pieces to form pinwheels.
7. Repeat with remaining tortillas.
8. Serve immediately or refrigerate until ready to serve.
