- 1 pound carrots, peeled and sliced
- 1 pound green beans, trimmed
- 2 tablespoons olive oil
- 1/4 cup honey
- 2 tablespoons lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the carrots and green beans with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in the oven for about 20-25 minutes, stirring halfway through.
- Transfer to a serving dish and top with parsley.
- Serve immediately.
Notes
Use fresh ingredients for the best flavor. Can be adjusted for sweetness and spiced for variation.
