Description

A fantastic side dish bringing color, flavor, and nutrition with sweet honey-glazed carrots and green beans.


Ingredients

  • 1 pound carrots, peeled and sliced
  • 1 pound green beans, trimmed
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the carrots and green beans with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper.
  3. Spread the vegetables in a single layer on a baking sheet.
  4. Roast in the oven for about 20-25 minutes, stirring halfway through.
  5. Transfer to a serving dish and top with parsley.
  6. Serve immediately.
