A quick, healthy, and satisfying one-pan dinner featuring tender chicken, sweet potatoes, and green beans, all coated in a delicious honey garlic marinade.

- 4 boneless, skinless chicken breasts
- 2 large sweet potatoes, peeled and cubed
- 1 pound green beans, trimmed
- 1/4 cup honey
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Prepare the Marinade: Whisk together honey, soy sauce, minced garlic, olive oil, paprika, dried thyme, salt, and pepper in a small bowl until well combined.
- Marinate the Chicken: Place chicken in a shallow dish or zip-top bag and pour marinade over it. Seal and refrigerate for at least 30 minutes, preferably up to 8 hours.
- Preheat the Oven: Preheat to 400°F (200°C).
- Prepare the Sweet Potatoes: Spread cubed sweet potatoes on a lined baking sheet. Drizzle with olive oil and sprinkle with salt and pepper, tossing to coat.
- Roast the Sweet Potatoes: Bake for 15 minutes until they start to soften.
- Add Chicken and Green Beans: Remove the baking sheet, push sweet potatoes to one side, and place marinated chicken on the other side. Arrange green beans around chicken and sweet potatoes.
- Add Remaining Marinade: Drizzle remaining marinade over chicken and vegetables.
- Bake: Return to oven and bake for an additional 20-25 minutes until chicken is cooked to 165°F (75°C) and sweet potatoes are tender.
- Serve: Let rest before serving, garnishing with pan juices and optional herbs.

Store leftovers in an airtight container for up to 3-4 days in the refrigerator or freeze for up to 3 months.
