Description
Soft, nutty cookies inspired by classic baklava filled with toasted walnuts, pistachios, and cinnamon, then drizzled with a luscious honey syrup for the perfect golden finish.
Ingredients
1/2 cup unsalted butter, softened
1/4 cup honey
1/3 cup brown sugar
1 egg
1 tsp vanilla extract
1 3/4 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup finely chopped walnuts
1/2 cup finely chopped pistachios
For the honey syrup:
1/4 cup honey
2 tbsp water
1 tbsp lemon juice
1/4 tsp cinnamon
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, cream together butter, honey, and brown sugar until light and fluffy.
3. Add egg and vanilla extract, mixing well.
4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
5. Add dry ingredients to wet and mix until combined.
6. Fold in the chopped walnuts and pistachios.
7. Scoop dough into tablespoon-sized balls and place on the baking sheet.
8. Flatten slightly and bake for 10–12 minutes, until golden around the edges.
9. While cookies bake, combine honey, water, lemon juice, and cinnamon in a small saucepan.
10. Simmer for 3–4 minutes, then cool slightly.
11. Drizzle warm cookies with honey syrup and let set before serving.
Notes
For extra crunch, sprinkle chopped nuts on top before baking.
Store in an airtight container for up to 5 days.
You can use pecans or almonds instead of walnuts or pistachios.
