Description

These Heart-Shaped Polenta Bites are the perfect savory appetizer or snack  crisp on the outside, creamy inside, and full of flavor. Cut into heart shapes and topped with Parmesan, herbs, or your favorite garnish, they’re a fun and elegant way to celebrate any special occasion.


Ingredients

Scale

1 cup yellow cornmeal (polenta)

4 cups water or broth

1/2 tsp salt

1/4 cup grated Parmesan cheese

1 tbsp butter or olive oil

1/2 tsp garlic powder (optional)

Fresh herbs (parsley, thyme, or rosemary), for garnish

Olive oil spray or drizzle, for baking

Salt & pepper, to taste

Optional toppings: goat cheese, roasted cherry tomatoes, or balsamic glaze


Instructions

1. In a saucepan, bring water (or broth) and salt to a boil.

2. Gradually whisk in the cornmeal, stirring constantly to prevent lumps.

3. Reduce heat to low and cook for 10–15 minutes, stirring frequently, until thick and creamy.

4. Stir in Parmesan cheese, butter or olive oil, and garlic powder.

5. Pour the polenta onto a parchment-lined baking sheet and spread evenly to about 1/2-inch thickness.

6. Let cool completely, then refrigerate for at least 30 minutes to firm up.

7. Once firm, use a small heart-shaped cookie cutter to cut out bites.

8. Preheat the oven to 425°F (220°C). Place bites on a parchment-lined baking sheet, brush or spray with olive oil, and season with salt and pepper.

9. Bake for 15–20 minutes, flipping halfway through, until golden and crisp.

10. Top with herbs, cheese, or a drizzle of balsamic glaze. Serve warm!

Notes

You can make the polenta base a day ahead and refrigerate overnight.

For extra crispiness, pan-sear the bites in olive oil after baking.

Use vegetable broth instead of water for more flavor.

Great as a base for appetizers or served with marinara sauce for dipping.
