Description
Creamy heart-shaped mini cheesecakes with a buttery graham cracker crust and smooth vanilla filling a charming, individual dessert perfect for Valentine’s Day or special celebrations.
Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tbsp unsalted butter, melted
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/4 cup sour cream
Pinch of salt
Nonstick spray for molds
Fresh berries for topping (optional)
Instructions
1. Preheat oven to 325°F (165°C).
2. Lightly grease heart-shaped silicone molds and place them on a baking sheet.
3. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
4. Press crust mixture firmly into the bottom of each mold.
5. In another bowl, beat cream cheese and sugar until smooth.
6. Add eggs one at a time, mixing just until incorporated.
7. Mix in vanilla extract, sour cream, and salt.
8. Divide cheesecake batter evenly over the crusts.
9. Bake for 18–22 minutes until centers are just set.
10. Remove from oven and cool completely.
11. Refrigerate for at least 2 hours before removing from molds.
12. Top with fresh berries if desired and serve chilled.
Notes
Do not overmix the batter to prevent cracking.
Silicone molds make removal easy and keep the heart shape clean.
These can be made a day ahead and refrigerated.
