- 1 medium watermelon
- 4 oz goat cheese
- 1/2 cup balsamic vinegar
- 1 tbsp honey
- Olive oil
- Salt and pepper
- Fresh mint for garnish
Instructions
- Preheat your grill to medium-high heat.
- Cut the watermelon into 1-inch thick steaks.
- Brush both sides of the watermelon steaks with olive oil and season with salt and pepper.
- Grill the watermelon for 3-4 minutes on each side until grill marks appear.
- In a small saucepan, combine balsamic vinegar and honey, simmer until reduced by half to create balsamic pearls.
- Warm goat cheese until soft.
- Remove grilled watermelon from the grill and top with warm goat cheese.
- Drizzle balsamic pearls over the watermelon, garnishing with fresh mint before serving.
