Ingredients

  • 1 medium watermelon
  • 4 oz goat cheese
  • 1/2 cup balsamic vinegar
  • 1 tbsp honey
  • Olive oil
  • Salt and pepper
  • Fresh mint for garnish

Instructions

  1. Preheat your grill to medium-high heat.
  2. Cut the watermelon into 1-inch thick steaks.
  3. Brush both sides of the watermelon steaks with olive oil and season with salt and pepper.
  4. Grill the watermelon for 3-4 minutes on each side until grill marks appear.
  5. In a small saucepan, combine balsamic vinegar and honey, simmer until reduced by half to create balsamic pearls.
  6. Warm goat cheese until soft.
  7. Remove grilled watermelon from the grill and top with warm goat cheese.
  8. Drizzle balsamic pearls over the watermelon, garnishing with fresh mint before serving.
