Description
A fresh and flavorful grilled chicken salad loaded with juicy marinated chicken, crisp greens, colorful veggies, and a light homemade dressing a perfect healthy meal for any day.
Ingredients
2 boneless, skinless chicken breasts
2 tbsp olive oil
1 tbsp lemon juice
1 garlic clove, minced
1/2 tsp salt
1/4 tsp black pepper
6 cups mixed salad greens
1 cup cherry tomatoes, halved
1/2 cucumber, sliced
1/4 red onion, thinly sliced
1/2 avocado, sliced
1/4 cup crumbled feta cheese
Dressing: 3 tbsp olive oil, 1 tbsp balsamic vinegar, 1 tsp honey, 1/2 tsp Dijon mustard, salt and pepper to taste
Instructions
1. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
2. Marinate the chicken breasts in the mixture for at least 20 minutes.
3. Preheat grill or grill pan over medium heat.
4. Grill chicken for 5–6 minutes per side, or until cooked through and juices run clear.
5. Let chicken rest for 5 minutes, then slice thinly.
6. Assemble salad by arranging greens, tomatoes, cucumber, red onion, avocado, and feta in a large bowl or platter.
7. Whisk dressing ingredients together and drizzle over salad.
8. Top with sliced grilled chicken and serve immediately.
Notes
Substitute feta with goat cheese or mozzarella for a different flavor.
For meal prep, store dressing separately and add just before serving.
Add toasted nuts or seeds for extra crunch and protein.
