A comforting, tangy green tomato soup with a smooth, velvety texture balanced with aromatics and herbs for a cozy, savory bowl perfect for cooler days.
Ingredients
2 tbsp olive oil
1 medium onion, chopped
2 garlic cloves, minced
2 lbs green tomatoes, chopped
3 cups vegetable broth
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried thyme
1/4 tsp smoked paprika
1/2 cup heavy cream or coconut milk
Fresh herbs for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion and cook until soft and translucent.
3. Stir in garlic and cook until fragrant.
4. Add chopped green tomatoes, salt, pepper, thyme, and smoked paprika.
5. Pour in vegetable broth and bring to a boil.
6. Reduce heat and simmer for 20–25 minutes until tomatoes are tender.
7. Blend soup until smooth using an immersion blender or blender.
8. Stir in cream and gently reheat.
9. Taste and adjust seasoning, then serve garnished with fresh herbs.
Notes
For extra richness, add a knob of butter before blending.
Adjust tanginess with a pinch of sugar if needed.
