- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 clove garlic, minced
- 1 egg
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup orzo pasta
- 2 cups chicken broth
- Juice and zest of 1 lemon
- Olive oil for cooking
Instructions
- Gather all the ingredients in a large mixing bowl.
- Add the ground chicken, breadcrumbs, grated parmesan, chopped parsley, minced garlic, egg, dried oregano, and a sprinkle of salt and pepper.
- Mix all the ingredients thoroughly using your hands or a spoon.
- Shape about one tablespoon of the mixture into a ball.
- Place the shaped meatballs on a plate or a baking sheet.
- Heat a skillet over medium heat and add a drizzle of olive oil.
- Add the meatballs to the skillet and cook for about 6-8 minutes, turning until golden brown.
- Bring 2 cups of chicken broth to a boil in a separate pot.
- Add in the orzo pasta and cook according to package instructions.
- Drain the orzo and stir in the juice and zest of the lemon.
- Serve by placing lemon orzo on each plate and topping with meatballs.
- Garnish with extra chopped parsley if desired.
Notes
Use fresh ingredients like parsley and real lemon juice for the best flavor. Adjust spices to your liking.
