Ingredients

2 cups gluten-free all-purpose flour

1/2 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

1 large egg

1 tbsp fresh lemon juice

1 tsp lemon zest

1 tsp vanilla extract

1/4 cup powdered sugar (optional, for rolling)


Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a bowl, whisk together gluten-free flour, baking powder, and salt.

3. In a separate bowl, cream butter and granulated sugar until light and fluffy.

4. Beat in egg, lemon juice, lemon zest, and vanilla extract.

5. Gradually mix dry ingredients into wet ingredients until a soft dough forms.

6. Chill dough for 20 minutes for easier handling.

7. Scoop dough, roll into balls, and roll in powdered sugar if desired.

8. Place cookies on prepared baking sheet.

9. Bake for 10–12 minutes until edges are set and centers are soft.

10. Cool on baking sheet for 5 minutes, then transfer to a wire rack.

Notes

For extra lemon flavor, add additional zest.

Do not overbake to keep cookies soft.

Store in an airtight container for up to 4 days.
