Ingredients
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp ground nutmeg
1/8 tsp ground cloves
3 tbsp brown sugar
1 cup milk
1/2 cup buttermilk
1/4 cup molasses
1 large egg
2 tbsp melted butter
1 tsp vanilla extract
Butter or oil for cooking
Instructions
1. In a large bowl, whisk together flour, baking powder, baking soda, salt, and all the spices.
2. In another bowl, whisk milk, buttermilk, molasses, egg, melted butter, and vanilla until smooth.
3. Pour wet ingredients into the dry ingredients and gently mix until just combined — do not overmix.
4. Let the batter rest for 5 minutes.
5. Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil.
6. Pour 1/4 cup of batter per pancake and cook until bubbles form on the surface, then flip and cook until golden brown.
7. Repeat with remaining batter.
8. Serve warm with butter, maple syrup, or whipped cream, and a sprinkle of cinnamon.
Notes
For extra flavor, add a few mini chocolate chips or chopped pecans to the batter.
To make dairy-free, use plant-based milk and vegan butter.
Leftover pancakes can be frozen and reheated for a quick festive breakfast.
