Ingredients
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp salt
1/2 cup unsalted butter, melted
1/2 cup dark molasses
1/2 cup brown sugar
1 large egg
1/2 cup milk
1 cup boiling water (for pudding sauce)
1/2 cup brown sugar (for pudding sauce)
2 tbsp butter (for pudding sauce)
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9-inch baking dish.
2. In a bowl, whisk together flour, baking powder, baking soda, ginger, cinnamon, cloves, and salt.
3. In another bowl, mix melted butter, molasses, brown sugar, egg, and milk until smooth.
4. Combine wet and dry ingredients until just mixed.
5. Pour batter into the prepared baking dish.
6. In a separate bowl, mix boiling water, brown sugar, and butter until dissolved. Carefully pour this mixture over the batter (do not stir).
7. Bake for 35–40 minutes, until the top is firm and a rich sauce forms underneath.
8. Serve warm, spooning sauce from the bottom over each serving.
Notes
Serve with whipped cream or vanilla ice cream for extra indulgence.
Add a touch of orange zest or candied ginger for a festive twist.
Leftovers can be reheated in the microwave for 20–30 seconds for a fresh-from-the-oven feel.
