- 12 oz cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup sour cream
- 8 oz semi-sweet chocolate, melted
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans
- 1/2 cup brown sugar
- 1/4 cup milk
- 1 pre-made graham cracker crust
Instructions
- Preheat the oven to 325°F (160°C).
- Prepare the cream cheese mixture by beating the softened cream cheese until smooth and creamy.
- Add granulated sugar and vanilla extract, mixing until smooth.
- Incorporate eggs one at a time, mixing until just combined.
- Mix in sour cream and melted chocolate until uniform.
- Pour the mixture into the graham cracker crust, smoothing out the top.
- Bake for 55-60 minutes until the center is set but slightly jiggly.
- Prepare the topping by combining coconut, pecans, brown sugar, and milk in a saucepan over medium heat.
- Add the coconut-pecan mixture to the baked cheesecake while it’s still warm.
- Cool at room temperature, then refrigerate for at least 4 hours before serving.
Notes
Serve with whipped cream or chocolate sauce for an extra touch.
