Ingredients

2 flatbreads or naan

1 tbsp olive oil

1/2 cup shredded mozzarella or crumbled feta

2 cups mixed salad greens (romaine, spinach, or arugula)

1/2 cup cherry tomatoes, halved

1/4 cup cucumber, thinly sliced

1/4 cup red onion, thinly sliced

1/4 cup shredded carrot

2 tbsp balsamic glaze or dressing of choice

Salt and pepper, to taste

Optional: chopped herbs, avocado slices, or olives for garnish


Instructions

1. Preheat oven to 400°F (200°C).

2. Brush flatbreads lightly with olive oil and top with shredded cheese.

3. Bake on a parchment-lined baking sheet for 6–8 minutes, or until cheese melts and edges turn golden.

4. Meanwhile, toss salad greens, tomatoes, cucumber, onion, and carrot in a bowl with your favorite dressing.

5. Remove flatbreads from the oven and let cool slightly.

6. Top each flatbread with the fresh garden salad mixture.

7. Drizzle with balsamic glaze and sprinkle with herbs, salt, and pepper.

8. Slice and serve immediately.

Notes

For extra protein, add grilled chicken, shrimp, or chickpeas on top.
