These Fudgy Chewy Brookies combine rich, gooey brownies with soft, chewy chocolate chip cookies for the ultimate dessert mash-up. Thick, decadent, and totally irresistible!
Ingredients
Brownie Layer
1/2 cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 tsp salt
1/4 tsp baking powder

1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 cup chocolate chips
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper.
2. Prepare the brownie batter by whisking melted butter, sugar, eggs, and vanilla together.
3. Add cocoa powder, flour, salt, and baking powder. Mix just until combined.
4. Spread brownie batter evenly into the bottom of the pan.
5. Prepare the cookie dough: cream butter, brown sugar, and granulated sugar until fluffy.
6. Mix in egg and vanilla.
7. Add flour, baking soda, and salt. Mix until a dough forms, then fold in chocolate chips.
8. Drop cookie dough over the brownie layer in spoonfuls and gently press to cover most of the top.
9. Bake for 28–35 minutes, or until edges are set but center is still soft.
10. Cool completely before slicing for clean squares.
Notes
For extra gooey brookies, slightly underbake.
Add chopped walnuts or pecans for crunch.
Use caramel or peanut butter chips for a fun twist.
