Description
Fudgy Brownie Cookies combine the best of both worlds the chewy, gooey texture of brownies with the crisp edges of cookies. Perfectly chocolatey, rich, and irresistibly decadent.
Ingredients
1 cup semisweet chocolate chips
2 oz unsweetened chocolate, chopped
1/4 cup unsalted butter
2/3 cup granulated sugar
1/3 cup brown sugar
2 large eggs
1 tsp vanilla extract
1/2 cup all-purpose flour
2 tbsp cocoa powder
1/4 tsp baking powder
1/4 tsp salt
1/2 cup additional chocolate chips (for mixing in)
Instructions
1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
2. In a microwave-safe bowl, melt the chocolate chips, unsweetened chocolate, and butter together in 30-second intervals, stirring until smooth.
3. In another bowl, whisk together the sugars, eggs, and vanilla until thick and glossy.
4. Slowly whisk the melted chocolate mixture into the egg mixture until combined.
5. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
6. Fold the dry ingredients into the chocolate batter until just combined.
7. Stir in the remaining chocolate chips.
8. Let the dough rest for 10 minutes to thicken slightly.
9. Scoop tablespoon-sized portions onto the prepared baking sheets.
10. Bake for 9–11 minutes, or until the tops are shiny and cracked but centers are still soft.
11. Cool completely on the baking sheets before removing.
Notes
Add a pinch of espresso powder to enhance the chocolate flavor.
For extra gooey centers, slightly underbake and let cool on the tray.
Store in an airtight container for up to 4 days or freeze for up to 2 months.
