- 4 large russet potatoes (or your choice of potatoes)
- 3 cups of cold water
- 2 teaspoons of salt
- Oil for frying (vegetable oil or peanut oil recommended)
- Optional toppings: truffle oil, grated Parmesan cheese, garlic powder, and fresh herbs
Instructions
- Prep the potatoes: Wash the russet potatoes thoroughly, scrub off any dirt, peel if desired.
- Cut the potatoes into even sticks, about ¼ to ½ inches thick.
- Soak the potatoes in cold water for at least 30 minutes to remove excess starch.
- Drain and dry the potatoes thoroughly using a kitchen towel.
- Heat the oil to around 325°F (160°C) in a deep fryer or heavy-bottomed pot.
- Fry the potatoes in small batches for 5-7 minutes until tender but not browned.
- Cool the fries for 10-15 minutes.
- Increase the oil temperature to 375°F (190°C) for a second fry.
- Fry the cooled potatoes a second time for 3-5 minutes until golden brown and crispy.
- Season with salt and any additional toppings while hot.
- Serve immediately for best results.
Notes
For best results, fry in two stages and avoid overcrowding the pot. Reheat leftover fries in the oven to regain crispiness.
