Ingredients
2 slices of thick-cut bread (sourdough or multigrain)
1/2 cup ricotta cheese
2 large eggs
1 tbsp olive oil, plus more for drizzling
Salt and black pepper, to taste
Optional toppings: red pepper flakes, fresh basil, chives, or honey
Instructions
1. Toast the bread slices until golden and crisp.
2. Spread ricotta cheese evenly over each slice of toast.
3. In a small skillet, heat olive oil over medium heat.
4. Crack in the eggs and fry until the whites are set but yolks remain runny, about 3–4 minutes.
5. Season eggs with salt and black pepper.
6. Place one fried egg on top of each ricotta toast.
7. Drizzle with extra olive oil and add any desired toppings like herbs, chili flakes, or honey.
8. Serve immediately while warm.
