- 2 cups marinara sauce

Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the eggplants by slicing lengthwise.
- Cook the eggplant slices by grilling or baking until tender.
- Make the cheese mixture by combining ricotta, mozzarella, Parmesan, egg, and seasonings.
- Assemble the dish by layering marinara and rolling the eggplant with cheese mixture.
- Add remaining marinara and mozzarella on top.
- Bake for 25-30 minutes until bubbly and golden.
