  • 2 medium eggplants, sliced lengthwise
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups marinara sauce
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the eggplants by slicing lengthwise.
  3. Cook the eggplant slices by grilling or baking until tender.
  4. Make the cheese mixture by combining ricotta, mozzarella, Parmesan, egg, and seasonings.
