- 1 ½ cups all-purpose flour
- 1 cup rolled oats
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 large egg
- 1 cup milk
- ¼ cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
- ¾ cup chocolate chips
Instructions
- Preheat your oven to 375°F (190°C).
- Line a 12-cup muffin tin with paper liners or grease it well.
- In a large bowl, mix together the all-purpose flour, rolled oats, granulated sugar, baking powder, baking soda, and salt.
- In a separate medium bowl, whisk together the egg, milk, vegetable oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Fold in the chocolate chips.
- Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
- Bake for about 18-22 minutes until a skewer comes out clean.
- Let cool in the tin for a few minutes before transferring to a wire rack.
Notes
Enjoy warm with butter or cream cheese. They can also be frozen for later consumption.
