Description

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup rolled oats
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg
  • 1 cup milk
  • ¼ cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • ¾ cup chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a 12-cup muffin tin with paper liners or grease it well.
  3. In a large bowl, mix together the all-purpose flour, rolled oats, granulated sugar, baking powder, baking soda, and salt.
  4. In a separate medium bowl, whisk together the egg, milk, vegetable oil, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  6. Fold in the chocolate chips.
  7. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  8. Bake for about 18-22 minutes until a skewer comes out clean.
  9. Let cool in the tin for a few minutes before transferring to a wire rack.

Notes

Enjoy warm with butter or cream cheese. They can also be frozen for later consumption.
