Ingredients

  • 1 graham cracker pie crust
  • 1 package softened cream cheese (8 oz)
  • 1 teaspoon vanilla extract
  • 1 can sweetened condensed milk (Eagle Brand)
  • 1/3 cup lemon juice
  • 1 can of cherry pie filling

Instructions

  1. In a mixing bowl, beat the softened cream cheese until light and fluffy.
  2. Pour in the sweetened condensed milk and blend thoroughly with the cream cheese.
  3. Add the lemon juice and vanilla extract; stir well to combine.
  4. Pour the cheesecake filling into the graham cracker pie crust and spread evenly.
  5. Cover and refrigerate for 2-3 hours, or overnight for best results.
  6. Chill the cherry pie filling in the fridge while the cheesecake sets.
  7. Before serving, top the cheesecake with the chilled pie filling.
