Description

A simple and flavorful one-dish meal featuring tender chicken, fluffy rice, and refreshing tzatziki sauce, perfect for busy weeknights.


Ingredients

  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 1/2 cups long-grain white rice (basmati or jasmine)
  • 2 1/2 cups chicken broth
  • 2 Tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried dill
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 large lemon, juiced
  • 1/2 cup tzatziki sauce, for serving
  • Fresh parsley and sliced cucumber, for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with olive oil.
  3. Combine the uncooked rice, chicken broth, minced garlic, olive oil, lemon juice, oregano, dill, salt, and black pepper in the baking dish.
  4. Add the cut chicken pieces evenly over the rice mixture.
  5. Cover the baking dish tightly with aluminum foil and bake for 35-40 minutes.
  6. Check to ensure the rice is tender and the chicken is fully cooked (internal temperature should be at least 165°F).
  7. Rest the dish for about 5 minutes, covered.
  8. Fluff the rice with a fork and serve warm, topped with tzatziki sauce and garnished with parsley and cucumber slices.

Notes

For a vegetarian version, substitute chicken with tofu. You can add more vegetables like peas or spinach for added nutrition.
