Savory Dijon-marinated chicken paired with roasted sweet potatoes, tender greens, and a tangy honey mustard drizzle  a balanced and flavorful bowl perfect for meal prep or weeknight dinners.


Ingredients

2 medium sweet potatoes, peeled and cubed

2 tbsp olive oil, divided

1/2 tsp smoked paprika

Salt and pepper to taste

1 lb chicken breast or thighs, cut into bite-size pieces

1 tbsp Dijon mustard

1 tbsp honey

1 tbsp apple cider vinegar

1 garlic clove, minced

4 cups mixed greens or baby spinach

1/4 cup crumbled feta or goat cheese (optional)

Cooked quinoa or brown rice, for serving

Fresh parsley for garnish


Instructions

1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

2. Toss cubed sweet potatoes with 1 tbsp olive oil, smoked paprika, salt, and pepper.

3. Spread evenly on the baking sheet and roast for 25–30 minutes, flipping halfway through, until tender and golden.

4. Meanwhile, in a bowl, whisk together Dijon mustard, honey, apple cider vinegar, garlic, and 1 tbsp olive oil.

5. Add chicken pieces to the marinade and toss to coat. Let sit for 10 minutes if time allows.

6. Heat a skillet over medium heat and cook the chicken for 6–8 minutes, stirring occasionally, until golden and cooked through.

7. Assemble bowls with a base of quinoa or greens, topped with roasted sweet potatoes and Dijon chicken.

8. Drizzle extra dressing or a bit of the marinade over the top.

9. Garnish with feta and parsley before serving.

Notes

Double the recipe for meal prep — it stores well for up to 4 days.

Use maple syrup instead of honey for a different sweetness.

Add avocado or roasted Brussels sprouts for extra nutrition.
