Description

Sweet and tart rhubarb custard bars with crispy edges and a soft custardy center, perfect for any occasion.


Ingredients

  • 2 cups rhubarb, chopped
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1/2 cup milk
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. Cream the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in vanilla.
  4. Combine the flour, baking powder, and salt in another bowl, then gradually add to the wet ingredients.
  5. Fold in the chopped rhubarb until evenly distributed.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Bake for 35-40 minutes, or until a toothpick comes out clean.
  8. Cool in the dish for 10-15 minutes before transferring to a wire rack to cool completely.
  9. Cut into squares and serve as desired.
