Ingredients

- 2 cups rhubarb, chopped
- 1 cup sugar
- 1 cup all-purpose flour
- 1/2 cup butter, softened
- 1/2 cup milk
- 3 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- Cream the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in vanilla.
- Combine the flour, baking powder, and salt in another bowl, then gradually add to the wet ingredients.
- Fold in the chopped rhubarb until evenly distributed.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 35-40 minutes, or until a toothpick comes out clean.
- Cool in the dish for 10-15 minutes before transferring to a wire rack to cool completely.
- Cut into squares and serve as desired.
