Ingredients

  • 1 cup Cherry Tomatoes
  • 1 medium Cucumber
  • 1 tablespoon Lime Juice
  • 1 handful Fresh Herbs (e.g., cilantro or parsley)

Instructions

  1. Prepare the Chicken: Grill the chicken breasts until fully cooked, about 6-7 minutes on each side. Let rest, then cut into bite-sized pieces.
  2. Cut the Vegetables: Wash and chop the cherry tomatoes and cucumber. Slice the tomatoes in half and cube the cucumber if using a regular variety.
  3. Mash the Avocado: In a bowl, scoop out the avocado flesh and mash until smooth but chunky.
  4. Combine Ingredients: Add the chicken, tomatoes, cucumber, lime juice, and herbs to the avocado. Mix gently to combine.
