- 2 cups Grilled Chicken
- 1 large Avocado
- 1 cup Cherry Tomatoes
- 1 medium Cucumber
- 1 tablespoon Lime Juice
- 1 handful Fresh Herbs (e.g., cilantro or parsley)
Instructions
- Prepare the Chicken: Grill the chicken breasts until fully cooked, about 6-7 minutes on each side. Let rest, then cut into bite-sized pieces.
- Cut the Vegetables: Wash and chop the cherry tomatoes and cucumber. Slice the tomatoes in half and cube the cucumber if using a regular variety.
- Mash the Avocado: In a bowl, scoop out the avocado flesh and mash until smooth but chunky.
- Combine Ingredients: Add the chicken, tomatoes, cucumber, lime juice, and herbs to the avocado. Mix gently to combine.
- Season to Taste: Add salt and pepper to your liking, stir again.
- Chill (Optional): For a chilled salad, cover and refrigerate for 30 minutes.
- Serve: Enjoy on its own, on greens, in a wrap, or on bread.
