Description
Festive and flavorful pinwheels made with cream cheese, cranberry sauce, and sweet red peppers a perfect make-ahead appetizer for holidays and parties.
Ingredients
4 large flour tortillas (10-inch size)
8 oz cream cheese, softened
1/2 cup whole berry cranberry sauce
1/2 cup finely diced red bell pepper
1/4 cup chopped green onions
1/4 tsp black pepper
1/4 tsp salt
1 tbsp chopped fresh parsley (optional)
Instructions
1. In a medium bowl, beat the softened cream cheese until smooth.
2. Stir in cranberry sauce, diced red bell pepper, green onions, black pepper, salt, and parsley until well combined.
3. Lay out the tortillas on a flat surface.
4. Spread a thin, even layer of the cranberry cream cheese mixture over each tortilla, leaving about 1/2 inch around the edges.
5. Roll each tortilla tightly from one end to the other.
6. Wrap each roll in plastic wrap and refrigerate for at least 1 hour (or up to 24 hours) to firm up.
7. Before serving, unwrap and slice each roll into 1-inch pinwheels.
8. Arrange on a platter and garnish with extra chopped herbs or a sprinkle of cranberries if desired.
Notes
Use spinach or sun-dried tomato tortillas for a colorful presentation.
For extra flavor, add a sprinkle of feta or goat cheese before rolling.
Pinwheels can be made a day ahead — just slice before serving for the best texture.
