Ingredients
10 large eggs
1 cup cottage cheese
1/2 cup shredded cheddar cheese (or your favorite cheese)
1/4 cup milk
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1/4 tsp paprika (optional)
1 tbsp olive oil or butter for greasing the dish
Optional add-ins: chopped spinach, diced bell peppers, green onions, or cooked bacon/ham
Instructions
1. Preheat oven to 375°F (190°C) and grease a 9×9-inch baking dish with butter or olive oil.
2. In a large mixing bowl, whisk together eggs, cottage cheese, milk, salt, pepper, garlic powder, and paprika until well combined.
3. Stir in shredded cheddar cheese and any optional mix-ins.
4. Pour the mixture into the prepared baking dish and spread evenly.
5. Bake for 35–40 minutes, or until the eggs are set and the top is golden.
6. Let cool slightly before slicing and serving.
7. Serve warm or refrigerate for up to 4 days for easy breakfasts.
