A fun twist on the classic Caprese salad, these mini pizza cups are delicious, healthy, and customizable with fresh ingredients.

- 1 cup cottage cheese
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls, halved
- 1/4 cup fresh basil, chopped
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 mini pizza crusts
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the cottage cheese, halved cherry tomatoes, halved mozzarella balls, chopped basil, olive oil, balsamic vinegar, garlic powder, salt, and black pepper. Stir until well mixed.
- Arrange the mini pizza crusts on a baking sheet and spoon the cottage cheese mixture into each crust, filling generously.
- Bake for 15-20 minutes until the crusts are golden and the cheese has melted. Keep an eye on them.
Notes
Best served warm. Drizzle with balsamic glaze and garnish with chopped basil before serving. Store leftovers in an airtight container for up to 3 days.
