A delightful twist on the classic Caprese salad combining fresh basil, cherry tomatoes, creamy mozzarella, and rotini pasta.
Ingredients

- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls, halved
- 1 cup fresh basil leaves
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Boil water in a large pot, adding salt to enhance flavor.
- Add the rotini pasta and cook according to package instructions (8-10 minutes) until al dente.
- Drain the pasta in a colander and rinse under cold running water.
- Combine the cooled pasta with cherry tomatoes, mozzarella balls, and fresh basil in a large bowl.
- Whisk together olive oil, balsamic vinegar, salt, and pepper for the dressing.
- Pour the dressing over the salad and gently toss everything together.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
Notes
For best flavor, store the dressing separately if not serving immediately. Garnish with extra basil or cheese before serving.
