Elegant coffee-flavored macarons with crisp shells and chewy centers, filled with a smooth Baileys Irish Cream buttercream. A sophisticated treat perfect for special occasions or coffee lovers.
Ingredients
1 cup powdered sugar
3/4 cup almond flour (finely sifted)
1 tbsp instant espresso powder
2 large egg whites (room temperature)
1/4 cup granulated sugar
1/2 tsp vanilla extract
Brown gel food coloring (optional)
1/2 cup unsalted butter, softened
1 3/4 cups powdered sugar (for filling)
2–3 tbsp Baileys Irish Cream
1 tsp instant espresso powder (for filling)
1–2 tbsp heavy cream (if needed)
Instructions
1. Line baking sheets with parchment paper.
2. Sift together powdered sugar, almond flour, and espresso powder.
3. In a clean bowl, beat egg whites until foamy, then gradually add granulated sugar and whip to stiff peaks.
4. Mix in vanilla and a small amount of brown gel coloring if desired.
5. Gently fold dry ingredients into meringue until batter flows like lava.
6. Transfer to a piping bag and pipe small rounds onto prepared sheets.
7. Tap baking sheets to release air bubbles and let rest 30–45 minutes until a skin forms.
8. Bake at 300°F (150°C) for 14–16 minutes; cool completely before removing.
9. For filling, beat butter until creamy, then add powdered sugar and espresso powder.
10. Mix in Baileys until smooth and fluffy; add cream if needed for consistency.
11. Pipe filling onto one shell and sandwich with another. Chill 24 hours before serving for best texture.

Ensure all bowls are grease-free for stable meringue.
Do not skip resting time to develop proper macaron feet.
Store macarons refrigerated in an airtight container for up to 5 days.
Flavor deepens after maturing overnight.
