  • 3 green onions (sliced)

  • 4 tablespoons soy sauce
  • 2 eggs (beaten)

Instructions

  1. Prepare your ingredients by gathering all items. Use chilled, day-old rice if possible.
  2. Heat the oil in a large skillet over medium-high heat until shimmering.
  3. Sauté the diced carrots for about 2 to 3 minutes until softened but still crunchy.
  4. Add the peas and minced garlic; sauté for another minute until fragrant.
  5. Incorporate the chilled rice, breaking up clumps; stir fry for about 3 to 5 minutes until heated through.
  6. Add the soy sauce and mix well to coat the rice evenly.
  7. Scramble the beaten eggs in an empty space on the skillet until cooked through, then mix into the rice.
  8. Finish by stirring in the sliced green onions, adjust seasoning if needed, and serve.
