Ingredients

- 1 cup rolled oats
- 1 scoop vanilla protein powder
- 1/2 cup unsweetened applesauce
- 1/4 cup almond milk
- 1/4 cup honey
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a large bowl, combine the applesauce, almond milk, honey, and vanilla extract. Mix until well blended.
- In a separate bowl, combine the rolled oats, protein powder, baking powder, ground cinnamon, and salt. Gradually add the dry mixture to the wet ingredients and stir until just combined. Fold in chopped walnuts if desired.
- Scoop the muffin batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 15 to 20 minutes, or until a toothpick inserted in the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Store in an airtight container at room temperature for up to 3 days, in the fridge for up to a week, or freeze for up to 3 months.
