- 200 grams (1¾ cups) powdered sugar
- 30 grams (3 tablespoons) unsweetened cocoa powder
- 110 grams (4 large) egg whites, at room temperature
- 30 grams (2 tablespoons) granulated sugar
- Pinch of salt
- 1 teaspoon vanilla extract
- 120 grams (1 cup) chocolate ganache or chocolate buttercream (for filling)
Instructions
- Prepare the baking sheets by lining them with parchment paper or silicone baking mats.
- Sift the almond flour, powdered sugar, and cocoa powder together in a medium bowl.
- Whip the egg whites in a clean mixing bowl with a pinch of salt until foamy, then gradually add the granulated sugar.
- Continue whipping until you reach stiff peaks.
- Fold the sifted dry ingredients into the whipped egg whites gently.
- Transfer the mixture to a piping bag fitted with a round tip.
- Pipe round circles about 1.5 inches in diameter on the prepared baking sheets.
- Let the piped macarons rest at room temperature for 30-60 minutes.
- Preheat your oven to 150°C (300°F).
- Bake the macarons for 15-20 minutes, watching closely.
- Cool the macarons completely on the baking sheets.
- Prepare the filling by melting chocolate and mixing with heavy cream.
- Assemble the macarons by piping filling onto half and topping with another macaron shell.
- Let the assembled macarons sit in the fridge for at least 24 hours before serving.
