Description

Ingredients

  • 125 grams (1 cup) almond flour
  • 200 grams (1¾ cups) powdered sugar
  • 30 grams (3 tablespoons) unsweetened cocoa powder
  • 110 grams (4 large) egg whites, at room temperature
  • 30 grams (2 tablespoons) granulated sugar
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 120 grams (1 cup) chocolate ganache or chocolate buttercream (for filling)

Instructions

  1. Prepare the baking sheets by lining them with parchment paper or silicone baking mats.
  2. Sift the almond flour, powdered sugar, and cocoa powder together in a medium bowl.
  3. Whip the egg whites in a clean mixing bowl with a pinch of salt until foamy, then gradually add the granulated sugar.
  4. Continue whipping until you reach stiff peaks.
  5. Fold the sifted dry ingredients into the whipped egg whites gently.
  6. Transfer the mixture to a piping bag fitted with a round tip.
  7. Pipe round circles about 1.5 inches in diameter on the prepared baking sheets.
  8. Let the piped macarons rest at room temperature for 30-60 minutes.
  9. Preheat your oven to 150°C (300°F).
  10. Bake the macarons for 15-20 minutes, watching closely.
  11. Cool the macarons completely on the baking sheets.
  12. Prepare the filling by melting chocolate and mixing with heavy cream.
  13. Assemble the macarons by piping filling onto half and topping with another macaron shell.
  14. Let the assembled macarons sit in the fridge for at least 24 hours before serving.

Notes

Serve on a decorative platter or pair with coffee or tea. Store in an airtight container in the refrigerator for up to 5 days.
