Description

A delightful loaf that combines rich chocolate and coffee flavors with sweet, overripe bananas.


Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cup Dutch-process cocoa powder
  • 1.5 tsp instant espresso powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1.5 cups mashed overripe bananas (about 3 large bananas)
  • 0.5 cup unsalted butter, melted and cooled
  • 0.75 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 cup semi-sweet or dark chocolate chips (plus extra for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing it and lining it with parchment paper.
  3. Mix the flour, cocoa powder, espresso powder, baking soda, and salt in a medium bowl.
  4. Mash the overripe bananas in a larger bowl until smooth, then mix in the cooled melted butter.
  5. Combine the brown sugar, egg, and vanilla extract into the mashed banana mixture.
  6. Fold the dry ingredients into the wet ingredients gently, making sure not to overmix.
  7. Add the chocolate chips and reserve some for topping if desired.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 55 to 65 minutes until a toothpick comes out clean.
  10. Cool the bread in the pan for 15 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm or at room temperature. Top with whipped cream, ice cream, or just enjoy it plain. Storing in plastic wrap will keep it fresh.
