- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda

- 1 cup chocolate chips
- 4 oz cream cheese, softened
- 2 tbsp sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat the oven and prepare the baking sheet by lining it with parchment paper and preheating to 350°F (175°C).
- Make the cheesecake filling by combining softened cream cheese, 2 tablespoons of sugar, and 1/2 teaspoon of vanilla extract in a medium bowl and chill.
- Prepare the cookie dough by creaming together softened butter, brown sugar, and white sugar until light and fluffy, then add egg and 1 teaspoon of vanilla extract.
- Combine dry ingredients in a separate bowl and gradually add to the wet mixture until just combined.
- Add chocolate chips to the cookie dough and fold until evenly distributed.
- Form cookies by taking a tablespoon of cookie dough, flatten it, place a teaspoon of cheesecake filling, then cover with more dough to form a ball.
- Bake the cookies on the prepared baking sheet for 10 to 12 minutes, until the edges are golden brown.
- Cool the cookies on a wire rack for complete cooling before serving.
Notes
Serve warm or at room temperature. These cookies can also be paired with a scoop of vanilla ice cream for an extra treat.
