Ingredients

2 large eggs

1 cup buttermilk

1/2 cup vegetable oil

2 tsp vanilla extract

1 cup boiling water

For the frosting:

1 cup unsalted butter, softened

3 and 1/2 cups powdered sugar

1/2 cup cocoa powder

1/2 tsp salt

2 tsp vanilla extract

1/4 cup heavy cream


Instructions

1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.

3. Add sugar, eggs, buttermilk, oil, and vanilla. Beat until smooth.

4. Carefully add boiling water and mix until the batter is thin and glossy.

5. Pour evenly into prepared pans and bake for 30–35 minutes or until a toothpick comes out clean.

6. Cool cakes completely before frosting.

7. To make frosting: beat butter until creamy. Add powdered sugar, cocoa, salt, vanilla, and heavy cream. Beat until fluffy and spreadable.

8. Frost the cooled cakes, stack, and smooth the sides. Slice and serve.

Notes

For extra richness, use hot coffee instead of boiling water.

Chill frosted cake for 30 minutes before slicing for cleaner cuts.

Store covered at room temperature for up to 3 days or refrigerate for longer freshness.
