Description

A comforting, low-carb casserole made with tender chicken, fresh zucchini, and plenty of melted cheese  perfect for an easy weeknight dinner that’s both hearty and healthy.


Ingredients

Scale

2 medium zucchinis, sliced into thin rounds

2 cups cooked chicken breast, shredded

1 cup shredded mozzarella cheese

1/2 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup sour cream

1/2 cup heavy cream or milk

2 garlic cloves, minced

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

1 tbsp olive oil

Fresh parsley for garnish


Instructions

1. Preheat oven to 375°F (190°C) and lightly grease a baking dish with olive oil.

2. In a large bowl, combine sour cream, heavy cream, garlic, Italian seasoning, salt, and pepper.

3. Add shredded chicken and zucchini slices to the bowl; toss to coat evenly in the creamy mixture.

4. Transfer mixture to the prepared baking dish and spread evenly.

5. Top with mozzarella, cheddar, and Parmesan cheeses.

6. Bake for 25–30 minutes, until bubbly and golden brown on top.

7. Let rest for 5 minutes before serving.

8. Garnish with fresh parsley and enjoy warm.

Notes

Add chopped spinach or mushrooms for extra vegetables.

Use rotisserie chicken to save prep time.

For a spicy twist, mix in a pinch of red pepper flakes or diced jalapeños.
