A healthy, comforting bake with tender chicken, fresh zucchini, and a cheesy topping perfect for weeknight dinners.
Ingredients
2 cups cooked chicken, shredded or diced
2 medium zucchinis, sliced
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 cup marinara or tomato sauce
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper, to taste
1 tbsp olive oil
Fresh basil or parsley, for garnish
Instructions
1. Preheat oven to 375°F (190°C).
2. Sauté zucchini in olive oil for 3-4 minutes until slightly tender.
3. Layer chicken, zucchini, and sauce in a baking dish; season with garlic, onion powder, salt, and pepper.
4. Sprinkle mozzarella and Parmesan evenly on top.
5. Bake 20-25 minutes until cheese is melted and golden.
6. Garnish with fresh basil or parsley before serving.
Notes
Use leftover or rotisserie chicken for convenience.
Add other vegetables such as bell peppers or mushrooms.
Serve with rice, pasta, or a side salad.
