Ingredients
12 oz spaghetti
2 cups cooked chicken, shredded
2 tbsp butter
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 cup mushrooms, sliced
2 tbsp all-purpose flour
2 cups chicken broth
1 cup milk or heavy cream
1/2 cup sour cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Salt and pepper to taste
1/4 cup breadcrumbs (optional, for topping)
1 tbsp chopped parsley for garnish
Instructions
1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
2. Cook spaghetti according to package directions; drain and set aside.
3. In a large skillet, heat butter and olive oil over medium heat.
4. Add onion, garlic, and mushrooms; sauté until softened and fragrant.
5. Stir in flour and cook for 1 minute to form a roux.
6. Slowly whisk in chicken broth and milk, stirring until smooth and thickened.
7. Add sour cream, mozzarella, Parmesan, salt, and pepper; stir until melted and creamy.
8. Add the shredded chicken and cooked spaghetti to the sauce; toss to combine evenly.
9. Transfer mixture to the prepared baking dish.
10. Top with breadcrumbs and a sprinkle of Parmesan, if desired.
11. Bake for 25–30 minutes, or until bubbly and golden on top.
12. Garnish with chopped parsley and serve warm.
Notes
Use rotisserie chicken for convenience.
Add peas or spinach for extra color and flavor.
