- 1 lb chicken breast, diced
- 1 tablespoon taco seasoning
- 1 can black beans, rinsed and drained
- 1 cup corn
- 1 cup salsa
- 1 cup shredded cheese
- Fresh cilantro for garnish
Instructions
- Cook the pasta according to the package instructions in boiling, salted water, then drain and set aside.
- Heat a tablespoon of olive oil in a large skillet over medium heat, add diced chicken breast, and cook for 6-8 minutes until no longer pink.
- Add the taco seasoning to the skillet and stir to coat the chicken, cooking for an additional 1-2 minutes.
- Combine the black beans, corn, and salsa into the skillet, stirring well and cooking for about 5 minutes.
- Mix in the drained pasta and half of the shredded cheese, stirring until well combined.
- Melt the remaining cheese on top, covering the skillet for 2-3 minutes on low heat.
- Serve warm, garnished with fresh cilantro.
