Tender, juicy chicken leg quarters slow-cooked with savory herbs, garlic, and a rich broth a no-fuss, flavorful meal that practically makes itself in the crockpot.
Ingredients
4 chicken leg quarters
1 tbsp olive oil
1 onion, sliced
3 garlic cloves, minced
1 tsp paprika
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
1/2 tsp dried rosemary
1 cup chicken broth
1 tbsp soy sauce (optional)
1 tbsp cornstarch + 1 tbsp water (optional, for thickening sauce)
Fresh parsley for garnish
Instructions
1. Pat chicken quarters dry and season both sides with salt, pepper, paprika, thyme, and rosemary.
2. Heat olive oil in a skillet over medium heat and sear chicken for 3–4 minutes per side until golden brown (optional, for extra flavor).
3. Place sliced onion and minced garlic at the bottom of the crockpot.
4. Arrange the chicken quarters on top.
5. Pour in the chicken broth and soy sauce if using.
6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and fully cooked.
7. (Optional) Remove chicken and thicken juices with cornstarch slurry on HIGH for 10 minutes.
8. Serve with mashed potatoes, rice, or vegetables, and garnish with fresh parsley.
Notes
You can add carrots and potatoes to the crockpot for a full meal.
For crispy skin, place cooked chicken under the broiler for 3–5 minutes before serving.
Leftovers keep well for up to 3 days and make great shredded chicken for sandwiches or salads.
