Description

A bold and aromatic South Indian-style dry chicken curry  Chicken Chukka is packed with spices, curry leaves, and roasted masala for an irresistibly rich and flavorful dish.


Ingredients

Scale

1 1/2 lbs chicken (bone-in pieces preferred)

2 tbsp oil or ghee

1 large onion, finely sliced

2 tomatoes, chopped

1 tbsp ginger-garlic paste

2 green chilies, slit

1 tsp mustard seeds

1012 curry leaves

1/2 tsp turmeric powder

1 tbsp coriander powder

1 tsp cumin powder

1 tsp garam masala

1 tbsp red chili powder (adjust to taste)

1 tsp black pepper powder

Salt to taste

Fresh coriander leaves for garnish

For the marinade:

1/2 cup plain yogurt

1 tsp chili powder

1/2 tsp turmeric

1 tsp salt


Instructions

1. Marinate the chicken with yogurt, chili powder, turmeric, and salt. Set aside for at least 30 minutes.

2. Heat oil or ghee in a large pan over medium heat. Add mustard seeds and let them splutter.

3. Add curry leaves, sliced onions, and green chilies. Sauté until golden brown.

4. Add ginger-garlic paste and cook until fragrant.

5. Stir in tomatoes and cook until soft and oil begins to separate.

6. Add all dry spices (turmeric, coriander, cumin, garam masala, red chili, and pepper). Stir well.

7. Add the marinated chicken and mix to coat evenly with the masala.

8. Cover and cook for 15–20 minutes, stirring occasionally, until chicken is tender and sauce thickens.

9. Uncover and cook on high heat for 5 minutes until dry and slightly roasted.

10. Garnish with fresh coriander leaves and serve hot with rice, parotta, or chapati.

Notes

For a richer flavor, use small country chicken pieces and roast longer.

Adjust spice levels based on your preference.

Leftovers taste even better the next day as the spices deepen in flavor.
