A warm, comforting chicken casserole loaded with tender chicken, creamy sauce, vegetables, and melted cheese perfect for busy nights or family dinners.
Ingredients
2 cups cooked shredded chicken
1 cup frozen mixed vegetables
1 cup chicken broth
1 cup shredded cheddar cheese
1 can (10.5 oz) cream of chicken soup
1/2 cup sour cream
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
1 cup crushed Ritz crackers or breadcrumbs
2 tbsp melted butter
Instructions
1. Preheat oven to 350°F (175°C). Grease a baking dish.
2. In a bowl, mix chicken, vegetables, soup, sour cream, broth, garlic powder, onion powder, salt, and pepper.
3. Spread the mixture evenly into the baking dish.
4. Top with shredded cheddar cheese.
5. Mix crushed crackers with melted butter and sprinkle over the top.
6. Bake for 25–30 minutes, until hot and bubbly.
7. Let cool slightly before serving.
Notes
Use rotisserie chicken for faster prep.
Swap cheddar for Monterey Jack or mozzarella.
Add cooked noodles or rice to make it heartier.
