Description
The ultimate crispy fried chicken burger juicy, flavorful chicken thighs double-dipped in seasoned buttermilk and spiced flour, fried to golden perfection and served with creamy sauce, lettuce, and pickles on a toasted brioche bun.
Ingredients
4 boneless skinless chicken thighs
1 cup buttermilk
1 tsp hot sauce
1 1/2 cups all-purpose flour
1/2 cup cornstarch
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp cayenne pepper
1 tsp salt
1/2 tsp black pepper
Vegetable oil, for frying
4 brioche burger buns, toasted
Lettuce leaves
Sliced pickles
Burger sauce or mayonnaise
Instructions
1. In a bowl, combine buttermilk and hot sauce. Add chicken thighs and marinate for at least 1 hour (or overnight for best results).
2. In another bowl, mix flour, cornstarch, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
3. Remove chicken from marinade and let excess drip off. Dredge in flour mixture, then dip back into buttermilk, then coat again in flour mixture for an extra crispy crust.
4. Heat vegetable oil in a deep pan to 350°F (175°C).
5. Fry chicken thighs in batches for 6–8 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
6. Drain on a wire rack or paper towels.
7. Assemble burgers by spreading sauce on toasted buns, adding lettuce, fried chicken, and pickles.
8. Top with the other half of the bun and serve hot.
Notes
For extra crunch, double fry the chicken — once at 325°F, then again at 375°F for 2 minutes.
Spicy mayo or coleslaw makes a great topping.
You can use chicken breasts if preferred, but thighs stay juicier.
